2 zucchini -- diced
2 large Roma tomatoes -- diced
3/4 cup Feta cheese -- crumbled
3 tablespoons lime juice
3 tablespoons olive oil
1/4 cup sliced black mission olives
1/4 cup chopped fresh flat leaf parsley
1/4 cup chopped fresh Mexican mint -- or oregano
1/4 teaspoon red pepper flakes -- or more to taste
1 teaspoon Monterey seasoning -- taco, or fajita seasoning mix

Mix above ingredients in a medium bowl.
