Golden Beet Relish - 5g Carbohydrate; 1g Dietary Fiber

3 large golden beets
1 orange -- juice and finely grated zest only
1 tablespoon sherry vinegar
salt and freshly ground pepper

Trim off the ends without cutting into the beet. Place in a microwave-safe bowl, cover with plastic film, and microwave on high (100%) until tender when pierced with a fork, about 4 to 5 minutes. (Alternatively, boil the beets until tender.) Cool then grate coarsely. Combine the beets with the orange juice and zest, and the sherry vinegar. season with salt and pepper to taste. Refrigerate until needed. Makes about 2 cups. With its long shreds from grating and its goldenrod color, this mildest of beets makes a sweet, friendly relish with hints of orange and sherry.
