Amount Measure Ingredient -- Preparation Method
1 teaspoon paprika
1/2 teaspoon cayenne pepper
2 teaspoons ground cumin
6 garlic cloves -- minced fine
1/2 cup fresh lemon juice -- or part lemon juice and part red wine vinegar, to taste
1/2 cup chopped fresh parsley
1/2 cup chopped fresh cilantro
1 1/4 cups olive oil -- approximately
salt -- to taste
freshly ground pepper -- to taste
Mix paprika, cayenne pepper, cumin and garlic with the lemon juice. Add the parsley, cilantro and enough olive oil to reach a spoonable consistency. Adjust tartness to suit palate, by adding lemon juice or vinegar. Add salt and pepper to taste. Yield about 2 cups (16 two-tablespoon servings). This is excellent with grilled [favorites] or salad.
