1 tablespoon olive oil -- plus 1 teaspoon
1 teaspoon butter
1 medium garlic bulb -- broken into cloves
1 rosemary sprig
1 teaspoon finely chopped fresh marjoram
1 teaspoon finely chopped fresh lemon thyme -- or any other kind of thyme
1 teaspoon finely chopped fresh tarragon
1/2 teaspoon lemon juice
salt -- to taste
pepper -- to taste
1 teaspoon finely chopped fresh chives -- for garnish (optional)
1 teaspoon finely chopped fresh chervil -- for garnish (optional)

Preheat oven to 350F. Mix 1 teaspoon of the oil and the butter. By hand, coat the garlic cloves with the mixture. Place on baking sheet with rosemary sprig. Bake until soft, 10-15minutes. Discard rosemary. Let garlic cool. While still warm, peel and remove stem portion. Place peeled garlic in a blender or food processor with remaining 1 tablespoon oil and other remaining ingredeints except the garnishes. Blend until smooth. Garnighs, if desired, with chives and chervil.

Makes 4 one-tablespoon servings.
