Greek Pita Pizzas - 25g Carbs, 4g Fiber
This trimmed-down beef or lamb pizza features some of the hallmarks of Greek cooking: rosemary, pita bread, feta cheese, and kalamata olives. A pita crust keeps the carbs low on this easy pizza.

6 oz extra-lean ground beef
1/4 cup onion, finely chopped
2 cloves garlic, minced
8 oz tomato sauce
1 tsp rosemary, fresh, snipped
2 pita, whole-wheat, split horizontally and toasted
1/2 cup mozzarella cheese, part-skim, shredded
1/2 cup spinach, shredded
1 small tomato, chopped
1/2 cup feta cheese, crumbled
12 olives, pitted, quartered
Preheat oven to 400 degrees F. In a nonstick skillet, cook beef, onion, and garlic until meat is brown; drain off fat. Stir in sauce and rosemary. Bring to boiling; reduce heat. Simmer for 2 minutes. Top pita rounds with meat mixture and mozzarella cheese. Bake for 2 to 3 minutes more or until cheese is melted. Top with spinach, tomato, feta cheese, and olives. Serve warm.
