Cherry Walnut Chicken Salad Sandwiches - 30g Carbs, 9g Fiber

1/2 cup dried cherries, chopped
1/2 cup celery, chopped
1/3 cup walnuts, chopped, toasted
2 Tbsp green onion, chopped
1/3 cup mayonnaise, reduced-fat
1 Tbsp sour cream, reduced-fat
1 tsp lemon juice, fresh
1/4 tsp salt
1/8 tsp pepper, black ground
3/4 lb chicken, breast (cooked), 3 cups shredded
12 slices bread, whole-wheat, light

Combine first 9 ingredients in a large bowl. Add chicken; stir to coat. Spread 1/2 cup chicken mixture over each of 6 bread slices. Top with remaining bread slices.

Serving size: 1 sandwich
