Full fat products are often healthier for us than the "imitation" of the product. For example whole milk has ingredients that skim doesn't have and it's a good fat for our body. I have just read "In Defense of Food" by Michael Pollan. Amazing information.
Nothing wrong with a nice well marbled steak, just hold the potato.

You know, I do, too. I think our taste buds are often programmed to like these things. Fat of the land and all. I have found different ways to try to mimic that taste in cooking. And, no, I won't pretend it is exactly the SAME, cause it is not, but the dishes are very tasty. An ingredient that I use a LOT now is Greek yogurt. I use the Oikos brand. It's fat free and 120 calories per cup. I have always thought that plain yogurt is two parts disgusting and one part gross, but the things I have made using this my husband has raved about, and he hates all yogurt. There is a particularly tasty salmon and shrimp chowder, and some great mashed potatoes that come from this stuff (though my portion size of the latter just got a LOT smaller).
