White Bean Sauce - 6 pts; 28g Carbohydrate; 7g Dietary Fiber
Amount Measure Ingredient -- Preparation Method:
15 ounces white beans -- (1 can) undrained
1/2 cup skim milk
3/4 cup vegetable stock
salt and freshly ground pepper
Pour the beans and their liquid, the milk, and the stock into a blender and whirl on high until a very smooth sauce forms, about 60 seconds. Season with salt and pepper to taste. Heat in a small saucepan and serve. Makes 2 1/2 cups (Serves 10 one-quarter cups).
