Vegetarian Italian Green Sauce - 1 pt; 3g Carbohydrate; 1g Dietary Fiber

Amount Measure Ingredient -- Preparation Method:

2 tablespoons Dijon mustard, 2 tablespoons capers, 2 garlic cloves, 1 tablespoon nori flakes -- (1 ounce) tightly packed (optional), 1 tablespoon olive oil, 1 large scallion -- trimmed and cut into 4 to 5 pieces, 1 1/2 cups tightly packed fresh parsley salt and freshly ground pepper

In a food processor, process the mustard, capers, garlic, nori flakes, oil, and scallion until everything is very well chopped. Add the parsley and process to form a thick but finely chopped sauce. Season with salt and pepper to taste. Makes about 1 cup (Serves 4 one-quarter cups).
