Diabetics Food: Snow Pea, Pepper And Cabbage Salad - 9.5g Carbs, 4g Fiber
Snow Pea, Pepper And Cabbage Salad - 9.5g Carbs, 4g Fiber

2 tablespoons olive oil, 1 1/2 tablespoons rice wine vinegar, 1 teaspoon salt, 1/2 packet sugar substitute, 1/2 pound snow peas, 3 cups shredded green cabbage, 1 red bell pepper, thinly sliced, 3 green onions, thinly sliced, 1/4 cup fresh chopped mint

Mix olive oil, vinegar, salt and sugar substitute in a small bowl. Place snow peas with enough water to cover in a microwave-safe bowl. Cover with plastic wrap; microwave on high one minute. Drain and slice in thirds lengthwise.
Mix snow peas, cabbage, pepper, onion and mint in a large bowl. Add dressing; toss to coat. Chill 15 minutes to blend flavors.

Makes 4 servings.
