Black Bean, Tomato and Dill Sauce - 0 pts; 6g Carbohydrate; 2g Dietary Fiber
Amount Measure Ingredient -- Preparation Method:
15 ounces canned black beans -- (1 can) undrained
2 medium tomatoes -- vine-ripened, cored and cut into about 8 pieces each
1 tablespoon balsamic vinegar
1/2 cup fresh dill -- (1 small bunch) thick stems removed
freshly ground black pepper
Puree beans, tomatoes, and vinegar in a blender until very smooth. Add the dill and blend until finely chopped. Taste, then season with pepper. Makes about 3 cups.
