Black Bean Sauce with Mild Green Chilies - 1 pt; 7g Carbohydrate; 2g Dietary Fiber
Amount Measure Ingredient -- Preparation Method:
15 ounces canned black beans -- (1 can) undrained
4 ounces diced mild green chile peppers -- (1 can) drained
1 cup vegetable stock
salt and freshly ground pepper
Pour the beans and their liquid, and the stock into a blender and whirl on high until a very smooth sauce forms, about 60 seconds. Season with salt and pepper to taste. Heat in a small saucepan and serve. Makes 3 1/4 cups.
