1 cup whipping cream
2 tablespoons butter
salt -- to taste
12 (to 14) whole black peppercorn
1/4 pound smoked salmon
To serve: -- cooked pasta for 4 people
Put cream, butter and salt into a large saucepan and bring to a boil. Simmer 5 minutes, stirring occasionally. Meanwhile pan-fry peppercorns or toast them under the broiler. Cut smoked salmon into 2-inch strips and add to cream mixture. Stir and add pasta. Toss and serve, garnished with toasted peppercorns. Makes 4 servings. This opulent recipe is the house specialty of Vesuvio, a popular Italian restaurant on the Croisette in Cannes. You can economize by buying smoked salmon trimmings but whole slices look better. Lightly steamed sugar peas make a good accompaniment.
