Salmon Sauce with Wine and Dill

Amount Measure Ingredient -- Preparation Method
1 cup whipping cream
1/4 cup butter
1/4 cup white wine
salt and freshly ground pepper to taste
1 pinch grated nutmeg
2 tablespoons freshly grated Parmesan cheese
1/4 cup chopped fresh dill
3/4 pound cooked fresh salmon -- flaked
To serve: cooked pasta to serve 4 people -- spinach pasta
fresh dill sprigs
Pour cream into a saucepan, add butter, wine, salt, pepper and nutmeg. Bring to a boil and cook until it is reduced by about a third. Stir in cheese and dill. Carefully fold in the salmon. Arrange pasta on 4 plates and top with the salmon-cream sauce. Garnish with sprigs of fresh dill.
Makes 4 servings.
VARIATIONS:
Use 3 T. sweet Martini or Cinzano Bianco in place of white wine.
This special-occasion dish comes from th Sweet Palate Restaurant in New York, where it is a firm favorite with the customers. It is quick to make and great for entertaining. For a memorable meal, serve with tagliatelle along with a side dish of sliced cucumber. Steamed fennel sprinkled with a little lime juice also goes well with it.
