Italian Crunchy Sauce - 7g Carbohydrate; 2g Dietary Fiber

Italian Crunchy Sauce

2 tablespoons sultanas -- or raisins
2 tablespoons capers
2 tablespoons toasted pine nuts
24 black olives -- pitted and quartered
1/2 garlic clove -- peeled and crushed
6 green onions -- trimmed and chopped
freshly ground black pepper
6 tablespoons extra virgin olive oil
To serve: cooked pasta to serve 4 people
2 tablespoons chopped fresh parsley

Cover sultanas or raisins and capers with water. Let stand 10-15 minutes, changing water once, until softened. Drain caper mixture and chop with the pine nuts and olives or chop in a food processor. Mix in garlic, green onions, black pepper and 4-6 tablespoons oil (reserving 2 T.). Spoon into a small shallow heatproof dish, place under the broiler and cook 3-4 minutes, stirring occasionally. Toss pasta in remaining oil and add vegetable mixture. Toss again and serve sprinkled with chopped parsley and more black pepper. Makes 4 servings. I first tried this mixture as a stuffing for grilled vegetables and liked it so much that I looked for other ways to use the same flavor combination. Pasta was the answer. The distinctively flavored
ingredients make a wonderful sauce with an interesting crunchy texture. I often serve it as a starter with spirals but you could use bows or wheels.
