Grass and Hay Sauce from Sienna

Amount Measure Ingredient -- Preparation Method
1/4 pound unsmoked bacon -- diced
1/4 pound prosciutto -- diced
2 tablespoons olive oil
1 onion -- peeled and minced
1 carrot -- peeled and minced
1 stalk celery -- trimmed and minced
1/4 pound brown mushrooms -- minced
14 ounces tomatoes -- (1 can)
1/2 cup white wine
4 ounces frozen peas
freshly ground black pepper
To serve: cooked pasta to serve 4 people

Fry bacon i a deep saucepan until crisp. Add prosciutto and then the oil. Next add onion, carrot, and celery and continue cooking gently for 5 minutes, stirring occasionally. Add mushrooms and cooks 2 minutes longer. Add tomatoes and white wine and bring to a boil. Simmer, uncovered, for 15 minutes. Add peas and black pepper and simmer for another 1-2 minutes. Pour over the pasta and serve. Makes 4 servings. The name of this modern pasta dish refers to the mixture of fresh green and yellow egg noodles, which are often served simply with butter or cream. However if you have a little time, try this version from Sienna; it will not take you more than half an hour and it makes a good dinner-party dish.
