Florentine Sauce with Green Peppercorns

1/4 pound salami
1/4 pound smoked ham
To serve: cooked pasta to serve 4 people
2 tablespoons olive oil
1/4 pound spinach -- or Swill chard leaves, shredded
2 tablespoons green peppercorns
freshly ground black pepper
freshly grated Parmesan cheese
Skin and dice salami and cut ham into thin strips. Add to pasta and toss over a low heat to warm thoroughly. Add oil, spinach or Swiss chard, green peppercorns and black pepper and serve with freshly grated Parmesan cheese. Makes 4 servings. Dishes cooked with spinach are often described as Florentine because the citizens of Florence have always had a preference for this vegetable. However this colorful pasta sauce comes from my Roman friend's repertoire and she is not sure where it originated! It is vital to add the spinach at the last minute, or it will become limp. The sauce looks very pretty with bows, butterflies or wheels.
