Pine Nut: Spicy Pine Nut Hummus - 6 pts; Carbs 19; Fiber 6g

1 tablespoon red pepper flakes
1/4 cup olive oil
1 cup dry garbanzo beans -- cooked and drained (or 2 cups canned)
1/2 cup toasted pine nuts
1/4 cup tahini paste -- (sesame paste)
1 clove garlic -- sliced
1/4 cup boiling water
1 lemon -- juiced
Salt -- to taste

In a small skilled warm the olive oil with the red pepper flakes to infuse the oil, being careful not to burn the flakes. Once the oil has begun to take on a rusty hue, remove from heat. In the bowl of a food processor pulse the garbanzo beans, toasted pine nuts, tahini paste and garlic. With the machine running pour the hot water into the feeder tube until the hummus becomes smooth and creamy. Add the lemon juice and salt and combine. Taste and adjust seasonings if necessary. Serve with chips or use it as a sandwich or wrap filling.
