To keep myself completely honest, I will test, test and test some more. If I suspect that something had too much carb, I test, if confirmed, I know not to eat that food again, or very little of it. Also I've trained myself to shop only the perimeter of the stores, which contain all the real food, the veggies, fruits, meat and fish, dairy. The internal shelves are mostly full of processed frankenfoods. One of the lessons I got from Pollan's book was "don't eat anything that your great grandparents would not recognize as food." Right off the top of my head I can think of many things!
I don't believe in diet food unless I am forced to use it, like the Splenda sometimes. (Or unless I actually prefer it to regular...a rarity.) Most of that stuff has a lot of additives and sugar as well as preservatives. I like the Oikos Greek yogurt for the rich, creamy taste above all other yogurts, but I sure would not eat it unless I did. I tend to prefer a more Mediterranean diet, low on red meat and high on fruits and vegetables and fish. However, I DO have a sweet tooth, and cutting back on that has been the hardest change to make. I don't think I honestly realized how many carbs I was eating in a day until I was forced to pay attention, and it has been a struggle. Being honest with myself about my eating habits by being more aware has been, well, not always pleasant.
