Moishe's Sesame Sauce

1 cup tahini -- (sesame seed paste)
1 clove garlic -- crushed
juice of 1 large lemon
1/4 cup cold water
1/4 teaspoon salt
1 dash freshly ground black pepper

Combine all the ingredients in a bowl and whisk until smooth. Refrigerate until ready to serve.
Yields 1 1/2 cups (serves 6 one-quarter cup servings)
Classic sauce served with falafel.
