Having trouble getting enough calories?

I know that some, maybe most of you are tired of hearing me whine about my problems, and comparatively speaking they are NOTHING compared to what some of you are going through, however it is a problem and I've got to figure out a solution.... .......so. .....

I'm relatively new at all of this, having been dx'ed on 02/12/09. I've managed to get it under control, at least for now, and am off the metformin and zocor. As of the end of May I had normal readings across the board. And I'm down 40 pounds, from a size 16 to a size 8. I've never been below a 10 in my life. So, what's the problem you ask........

I am having trouble getting enough calories. I've averaging about 1200 per day, but at my height/weight/ activity level I need to be eating somewhere nearer 2000 to maintain.

I called my DNE yesterday, and she said to add foods across the board ie all meals should now include a starch as well as a protein. She said I could go as high as 60 carbs per meal but that seems insanely high to me. For three meals that would be 180, throw in a snack or three and I'm over 200 per day. She said that if they were added "equally to all meals/snacks" it shouldn't affect my bg.

However, I'm a bit leary. I've been on a self imposed 120 +/- carbs per day, and the idea of almost doubling that, quite frankly, scares the hell out of me.

So...... Anyone out there have any ideas for high caloric/low or relatively low carb foods. I'm not a sweets person, never have been. Almost all of my sugar came from pepsi. ie I have a hershey bar in my fridge thats been there since before X-mas, roughly 2 months before my dx.

Again, I'm sorry to bother the group with this, when so many of you are fighting the good fight in the other direction, but I don't know where else to go.
