Tomatoes can be very sweet, as in the tomato *jam* I've tasted. Granted sugar is added, but I have yet to run across any spinach jam...

I have yet to meet the onion I didn't like, but I do tend to eat them raw. When I cook with them, I haven't noticed that they raise my bgs, as long as I don't go crazy adding them to my food. There is something that is popular here that I am not sure if people eat elsewhere. It is jalapeno jelly. I have never eaen it, but know many who do.
