White Bean Aioli - 1 pt; 11g Carbohydrate; 3g Dietary Fiber

16 ounces white beans -- (1 can) drained or 1 1/2 cups home-made
2 garlic cloves -- (to 3 cloves) peeled
juice of 1 large lemon
salt and freshly ground pepper
In a food processor, puree the beans, garlic, and lemon juice until smooth and creamy. In small batches, scoop the sauce into a strainer and press with the back of a kitchen spoon to push the smooth sauce through, discarding any unsoftened bits of the beans. Season with salt and pepper. Makes about 1 1/2 cups.
