Healthy Food for Diabetics: Thai Coffee Granita
Thai Coffee Granita

4 cups water
3/4 cup Thai ground coffee
1/3 cup sugar -- plus 1 tablespoon sugar
1 cup cold heavy cream
1/2 teaspoon pure vanilla extract

Bring the water to a boil in a large pot. Whisk in the coffee. Return the mixture to boil and remove from the heat. Cover and let stand for 10 minutes. Pour the mixture through a fine mesh strainer, then through a coffee filter to remove all sediment.

Measure 3 cups of the strained coffee into a medium-size mixing bowl. Add 1/3 cup of the sugar and stir until it is dissolved. Let cool to room temperature. Pour the cooled coffee into two ice cube trays and freeze.
