Amount Measure Ingredient -- Preparation Method
1 hard-cooked egg -- minced
5 (to 6) anchovy fillets -- drained and minced
3 tablespoons chopped fresh parsley
3 tablespoons pickle -- minced
2 tablespoons capers -- minced
1 garlic clove -- peeled and crushed
1 tablespoon lemon juice
6 tablespoons extra-virgin olive oil
1/4 teaspoon cayenne pepper
salt and freshly ground pepper to taste
To serve: cooked pasta to serve 4 people -- as a starter
Combine all chopped and minced ingredients, then add lemon juice, oil, cayenne pepper, salt and pepper. Place in a small saucepan and heat very gently. Spoon over the pasta and serve at once. Makes 4 servings. I like this made with cornichons, or small French gherkins, but any kind of pickle will do.
