Oriental Mushroom Sauce - 8g Carbohydrate; 2g Dietary Fiber

Amount Measure Ingredient -- Preparation Method
3/4 pound oyster mushrooms
1/4 cup olive oil
1 clove garlic -- peeled and crushed (optional)
1 bunch chopped fresh chives -- large bunch
1 tablespoon soy sauce
1/4 cup orange juice
1 tablespoon grated orange peel
1 pinch Chinese five spice powder
To serve: -- cooked pasta for 4 people

Roughly chop mushrooms just before starting to cook. Heat oil in a large frying pan and gently saute the garlic, if using, and half the chives for 1 minutes. Add soy sauce, orange juice and orange peel and bring to a boil. Continue cooking for 2-3 minutes to reduce a little. Add Chinese five-spice powder and mushrooms and toss all together over medium heat for about 1 minute. Spoon over pasta, sprinkle with remaining chives and serve at once. Makes 4 servings.

VARIATIONS:
1. Add sliced peel from 3 kumquats with orange peel.
2. Instead of Chinese five-spice powder, add 1 t. roasted sesame oil and sprinkle with toasted sesame seeds.
