1 bunch cilantro -- minced stem and leaf
1/3 cup pine nuts
2 carrots -- (to 3) peeled and grated into ribbons or shreds
1/2 onion -- finely minced
3 tablespoons lime juice
3 tablespoons olive oil -- (to 4 T)
salt and pepper -- to taste
In a bowl, mix cilantro, pine nuts, onion, carrot, lime juice, olive oil, salt and pepper. Stir these around really well and let site so all the flavors can meld.
Makes about 1 1/2 generous cup (About 4 one-quarter cup servings). Serve over mango and ripe pear salad with soft goat cheese.
