Diabetes: Even chol numbers (all of them) are back to within normal ranges

I *think* I may be one of those lucky ones , at least I hope that it works out that way, that aren't all that insulin resistant. My numbers, at 4 months and counting, are very good. Even my chol numbers (all of them) are back to within normal ranges. So, last night I had to take my daughter shopping, and we were running later than I had planned, and I was getting really hungry. Kaleena loves Boston Market, so I decided to treat her.

I also decided, consiously, that it would be a bad night for me. I had the 1/4 white meal with m potatoes, gravey and gr beans. At least no bread . I tested just prior to eating and was 93, at an hour after I was 118, at 2 hours I was 107.
Being a compulsive counter, I wasn't content to let well enough alone. When I got home I went to their website to see just exactly what I had ingested. It wasn't pretty. Calories = 700; carbs = 78; protein (the only good thing) = 33; sat fat = 11; sodium = 2590; and chol = 225. Her Boston Carver sandwich with mac & cheese was way worst. Even though it didn't affect my numbers, I won't be doing that again However, I do feel that we all need a occasional treat. As long as it's a consious decision and you don't *treat* yourself every day.

There are times when it would be so easy to "take the numbers and run". I mean I now know that I CAN eat that without having an immediate issue with my BG going up, but that doesn't mean that I SHOULD eat that. Education is a double edged sword . Now that I know, way more, than I ever wanted to about food, I seriously doubt that I'll ever eat anything again without wanting/needing to know whats in it.
