Diabetes: Answer and Question about YMMV

Judy, I was not asking "why her and not me." I have never felt a speck or hint of "why me" since being diagnosed with this condition, nor do I feel that my inability to handle certain foods successfully is some sort of hardship or sacrifice for me. I enjoy what I eat. I was merely asking because I know that for me, as well as for my extremely insulin sensitive Type 1 friend, who uses even less insulin per day than I do (and as I said, I use very little, but more than she does), foods like pasta and breads raise the BG too high, far in excess of the amount of food or the amount of insulin used to compensate for that food. There are many foods I don't eat and don't care if I ever eat again. I do enjoy bread, but am very careful with how much and what type, and don't feel that skipping it most days is a sacrifice for me. I grew up in an Italian family, and ate pasta (well, macaroni and gravy) twice a week from the time I could chew solid food. Now, I eat pasta once a year, except for the occasional bowl of egg pastina that I might have if my stomach can't tolerate anything more than the most mild, calming food (and I measure/weigh out 2 ounces dry), and if someone had told me that I'd abandon pasta as a regular part of my diet, I would have thought him or her crazy. Yet, I don't miss it. I'm very content keeping it a once a year treat.

Mashed potatoes? Not only don't I eat any potato other than the occasional a few times a year sweet potato, mashed potatoes make me feel really heavy and sluggish and exhausted and I not only choose not to eat them, I won't even try a taste if they inadvertently end up on my plate. I find them so unpleasant, as I do most heavy starches. I like brown rice, but only eat a couple of ounces at a time, which is quite a small amount. I only eat steamed veggies and protein if I order Chinese food; I order the sauces on the side, eat it with hot sauce or soy sauce, and spoon a Tbsp or less of the prepared sauce on my food. I'd rather eat a bowl of the veggie and protein than bulk up on the rice portion.

Indian food is the same. I love Indian, and order a veggie-based dish, but leave all the rice aside. I like brown rice, but I've lost my taste for almost every heavy starch. Not interested.
