Roasted Shallot Hummus - 9g Carbs, 2g Fiber

Amount Measure Ingredient -- Preparation Method
8 shallots
1 can chick peas
1 clove garlic
1 teaspoon kosher salt
1/3 cup tahini
3 tablespoons lemon juice
1 tablespoon olive oil
1/4 teaspoon paprika
1/4 teaspoon hot sauce

Preheat oven 350F. Remove shallot outer skin. Wrap in foil. Bake one hour. Cool 10 min Combine ingredients and process to desired consistency.

Makes around 3 cups (10-12 one-quarter cup servings)
