Beth's Banana Chocolate Chip Muffins - 16.1g Carbs, 1.5g Fiber, 1.5g Sugar
For a snack or dessert, they're good!
1 cup bananas, mashed (about 2 1/2 medium bananas)
1 large egg
1/2 cup applesauce
1 Tbsp stevia OR 1/2 cup Splenda
1 cup whole wheat flour
1 cup regular flour
1/4 cup milk, 1%
1/4 tsp vanilla extract
2 tsp baking powder
3 Tbsp semi-sweet mini chocolate chips
Mix all ingredients in large bowl. Fill 16 muffin tins or papers about halfway. (I used an ice cream scoop to spoon it because the dough will be thick.)
Bake 350 degrees for 20 minutes.
